Dr. Ricardo R del Rosario recognized of his important contributions in the field was born and grew up in the town of Orani in the province of Bataan. He received his B.S. in Sugar Technology from the College of Agriculture of UP. He did his graduate work at Michigan State University where he completed his Master of Science and Ph. D degrees in Food Science. He retired from the University of the Philippines after 32 years on the faculty as Professor of Food Science and Technology. During his term, he taught undergraduate courses on Food Chemistry, Product Research and Process Development which he instituted, Food Processing Management and graduate course on Food Analysis and advised 54 undergraduate students, 20 Master of Science and 9 doctoral students. His major research interest are in Oilseed Processing and Technology especially coconut. He had few research works on rice, legumes and root crops. His basic and applied research works led to innovations of new food products like preserved coconut water beverage, coconut sap syrup, coconut milk beverage, dried buko, instant ube powder, nutrisnack/ baby food from rice and mungbean, canned balut and textured vegetable protein from full-fat soy flour. He has authored 55 refereed journal research publications, authored and co-authored 4 books and two patents applications. During his term as Director, he started the revision of the food science and technology curriculum with the able assistance of Dr. V.V. Garcia. It was also during his term as director when retirement of the senior faculty members started. Thru the help of Chancellor W.G. David, a faculty development program was started . He provided the needed support to hire six new faculty to replace the first six retiring professor followed by another three. Dr. Ricardo R. del Rosario is a member of the Chemical Society of the Philippines, Institute of Food Science (USA), Philippine Association of Food technologists (PAFT), VITA (Arlington, Virginia) and National Research Council of the Philippines. Dr. del Rosario also served as President of Chemical Society of the Philippine Los Baños Chapter and Philippine Association of Food Technologist. He served as consultant to NFA, FAO and several food companies. Some of the recognitions Dr. del Rosario has received include: 1986 Outstanding Researcher (Chemical Society of the Philippines UPLB), 1995 Outstanding Teacher (Chemical Society of the Philippines UPLB), Outstanding Alumnus (College of Agricultural Engineering), 1989 Achievement Award on Food Chemistry (National Research Council of the Philippines), PCRDF Professorial Chair 1978-1982 He was married to Dr. Dafrosa G. Argañosa (B.S.A., UPLB, 1960, M.S. Botany, 1967, Ph.D. Horticulture, MSU 1971) and was gifted with three children, namely Rhodora (B.S. Chem., UPLB, 1983, MD. UP Manila 1987), Brenda (B.S.A. UPLB 1990, M.S. Food Science, Georgia, 1994, MBA UP Diliman, 2000) and Ronald (B.S.A., UPLB, 1999). After being a widower, he married Olivia M. Maldo (B.S. Chem., Adamson University, 1976, Graduate Diploma in Food Science, Hawkesbury Agricultural College, 1980, M.S. Food Science, 1988 and Ph.D. Food Science, UPLB, 1999). After his retirement, he continued his consultancy work for the food industry such as trouble shooting. and process and product development.
