Dr. Bienvenido Juliano is recognized for his contributions in rice chemistry. His research finds applications on rice grain quality, chemistry and nutrition, on cereal chemistry, on starch, protein, lipids, and rice food products. His work demonstrates that: amylase content is the major determinant of rice grain quality; the protein body nature of rice proteins; and that the increase in protein content has nutritional value (in cooperative human and rat studies).
